Artichoke Dipping Sauce

By Connor Forbes

So, you’ve steamed an artichoke, and you’re looking at it and wondering what the heck do you dip it in? Don’t get me wrong, an artichoke is a delicious thing to eat on its own, but add a buttery sauce and dang, now you are really living. With rich deep flavors warming your insides. I grew up on this dipping sauce. It is the one that my dad has been making my entire life and I don’t think another one has come close to beating it, in my opinion. So, let’s make some dipping sauce! Makes enough for 1-2 artichokes.

Ingredients

  • 2 tbsp butter
  • 1 tbsp mayo
  • 1 tsp Dijon mustard
  • Squeeze of lemon

To Make

In a small sauce pan on medium low heat, melt the butter. Add in the Dijon and squeezed lemon. Stir until smooth. Turn of heat. Add mayo stirring until smooth. Serve immediately.

To Make an Artichoke

Cut the artichoke in half. Cut or scoop out the fuzzies. Steam for about a half hour or until the stalk is fork tender.
