Breakfast Taco

Breakfast is an often-overlooked meal in my mind. At least for me. I don’t find it a substantial meal in the traditional form. Bagels, Cereal, Pancakes… they don’t keep me satisfied for a very long period of time. However, in a stupor of uncertainty as to what to eat the other day, I thought, well I can make a breakfast taco. And then I had breakfast tacos for like 3 days in a row. They don’t take long to make, and it kept me satiated for the whole morning.

Ingredients

  • 2 eggs
  • 1 tsp milk or water
  • 1 or 2 tortillas
  • 2 tbsp shredded cheddar or Mexican blend cheese
  • Salsa to taste
  • Cilantro to taste
  • Onions or cucumbers to add some crunch

To Make

Crack two eggs in a bowl and add the milk or water. Whisk with a fork for as long as you can stand it. I usually try to get to 60 seconds. This adds air and makes for a fluffier egg. Add in the cheese and mix just to incorporate. Heat a nonstick pan on medium heat and add the egg mixture. Let cook for a minute or two and then gently start moving the broadside of a spatula through the eggs. Do this until eggs are just cooked through for the silkiest, smoothest egg. Heat a tortilla (I like to throw one on an open flame of my stovetop burner for a few seconds on each side). Top with salsa, cilantro, onion, or cucumber. Or whatever the heck you want. I like to add Cholula too. EAT!
