Purple Sweet Potato

A purple sweet potato, or yam or ube, landed on my counter and I thought, wow, that is a cool looking tuber. I wanted to treat it just like any other sweet potato. Roasting is always a good option, but for the little crispy bits on the edges I like to sauté them in a pan. These are sweet, savory, and the perfect side dish for almost any meal. You can sub out regular sweet potato if you can’t find a purple one.

Ingredients

* 1 large Purple Sweet Potato

* 2 tbsp oil

* 2 tbsp honey

* 1 tsp salt

To Make

Peel sweet potato. Cut sweet potato into half inch cubes. Heat a large sauté pan over medium to medium-high heat. Add oil and let it heat up until it is just simmering. Add sweet potato. Cook until tender about 8-10 minutes, stirring only occasionally. Salt. Turn off heat, remove from burner and mix in honey. Serve and Eat!
