Roasted Sweet Potato

I am having a really hard time coming up with something clever and fun to say about this dish. Usually, I like to start with a jazzy story about why I made it. But I don’t really have anything today, so I’ll jump right into the meat and sweet potatoes.

Ingredients

  • 1 large sweet potato diced into cubes
  • 2 shallots sliced
  • 1 tbsp olive oil
  • 1 tsp salt

To Make

Preheat oven to 425. In a bowl combine all ingredients and toss until sweet potato is evenly covered in olive oil. Spread the mix out over a baking sheet so that nothing is stacked on top of each other. Bake for 20 minutes. With a spatula carefully mix the ingredients on the pan and test for tenderness. If the potatoes are soft enough to easily squish, you are done. Otherwise continue baking in 5-minute increments, checking each 5 minutes to see how they are doing. EAT!

I served these with pork chops and coleslaw. Quite a delicious and flavorful meal.
