Sweet Potato Gnocchi

I was gifted a very nice knife for Christmas, and I have been putting it through the paces to see what it can do. As part of that rigorous testing program I cut into a sweet potato, for no other reason than to cut it. I had no plan of what to actually do with it. But inspiration struck and I thought gnocchi! Don’t know where that came from, but it sounded good. So off I went.

Serves 2-3. This recipe scales linearly, so double or triple ingredients to match your serving size.

Ingredients

  • 1 lb sweet potato
  • 1 cup flour
  • ½ tsp salt

To Make

Microwave or roast sweet potato until it is soft and can be poked through with a fork. Discard the skin. In a bowl mix the sweet potato meat with the flour and salt until everything is mixed consistently. Knead gently. Cut pieces off the dough and roll into long snakes. Cut into about ½ to ¾ inch nuggets. Boil for 3-4 minutes depending on thickness. Serve with a browned butter and sage, or other sauce of your liking. Enjoy!
