Caesar Dressing

This recipe is so good. First published in April 2022, I like to reprint it every once in a while, for new readers and old readers alike. If you like Caesar salads, you need to keep this recipe in mind to make at home.

My mom is a big salad eater. Recently, while she was visiting, she dropped on me a homemade Caesar dressing that she has been making. I was like wow, this is truly amazing stuff and why have I not been making more dressings? As in any dressings. First, they intimidate me. And I didn’t really eat many “salads” in the second place. But having made this first with my mom and then tweaked to my preferences I can say that I should not have been so worried about making dressings to start with. Its pretty darn easy to make this dressing so let’s get to it! Makes enough for 2 family sized Caesar Salads.

 

Ingredients

  • 1 cup mayo
  • ½ cup shredded parmesan
  • 1.5 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tbsp chopped garlic
  • 1 tbsp olive oil
  • 1 tbsp lemon Juice
  • 1 tsp salt
  • 1 tsp anchovy paste (optional)
  • ½ tsp horseradish (optional)

 

To Make

In a bowl, mix all the ingredients. Transfer into a jar with lid and refrigerate for an hour before using.

To make a Caesar salad, combine and toss lettuce (traditionally romaine but I like a mix of garden greens), shredded parmesan, and croutons. Get fancy and add a protein such as chicken or shrimp. EAT!
