A cucumber, tomato and onion salad is a great side to any meal. It is especially great with a rich and fatty meat. The acidity of the salad provides the perfect balance to compliment the richness of the meat. Or go the veggie route and pair with a tofu or cauliflower steak. Another option for this salad, and one I found myself indulging in, is to eat it plain for a snack. Idk, go wild. This salad is awesome and I’m sure your loved ones will agree. Serves 4.
Ingredients
- 1 large cucumber
- 2 cups cherry or grape tomatoes
- 1 small onion, any color
- 3 tablespoons seasoned rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon salt
To Make
Slice the tomatoes in half. Cut the onion into half-moons. Cut the cucumber in to half-inch cubes. Place veggies in a bowl and add the vinegar, oil, and salt. Mix. And EAT!
