I can hear you thinking already, “Oh, come on, is this another garden recipe and what in the heck is pineapple slaw?” Lucky for you, I am here to answer your questions and make cooking easier.
First question, yes and no. I did grow the cabbage in my yard, but I did not grow the pineapple. Though you totally can grow pineapple in your yard in Southern California, I do not. I don’t have the space or patience they require.
Second question, pineapple slaw is coleslaw with pineapple. Don’t overthink it. It’s bomb.
Ingredients
- ½ cabbage sliced as thin as possible
- 1 cup diced pineapple
- 2 tbsp seasoned rice vinegar
- 1 tbsp mayo
- 1 tbsp diced cilantro
- 1 tbsp diced basil
To Make
Combine all ingredients in a bowl and mix. Eat immediately or chill and eat later. Serve with grilled meats, pulled pork, or by itself as a side to any dish.
